Preparation time : 5 minutes. Cooking time : 1 hour. Serves 4
3 large sweet potatoes
2 to 3 tablespoons olive oil
2 pinches dried oregano
salt and ground black pepper
1. Preheat oven to 180 C / Gas mark 4.
2. Wash and peel the sweet potatoes. Cut into medium size pieces. Place the cut sweet potatoes and olive oil in a non-stick baking dish. Toss to coat. Sprinkle with oregano, salt and pepper to taste.
3. Bake in preheated oven for 60 minutes or until soft.
